Sourced from 3 different vineyards of select Chardonnay parcels from this sun-drenched southerly point of Burgundy, each parcel separately fermented to preserve the characteristic of each site.
Slow fermentation in stainless steel tanks ensures full development of the rich character without the use of oak, with a keen eye on the development so that freshness is also maintained. Blending of the separate parcels allows more complexity than if working from a single site.
