Vibrant ruby red in colour, this expressive wine is reminiscent of smokey forest floor, with red berries and cured charcuterie meats. Fine tannins give gentle structure that balances with the bright acidity leading into baking spices on the finish.
Based in Languedoc-Rousillon, Maison Chavin were established in 2010 and specialise in high-end, alcohol-removed wines and sparkling wines. At the helm is Mathilde Boulachin, who was born in Champagne and subsequently went on to study the business of wine, travel extensively and work in wine buying and brand management before setting up her own company.
Made from a selection of Pinot Noir wines that are chosen for the intensity of aromas and freshness. This blend is then gently de-alcoholised through a vacuum distillation process with temperatures never going above 35 degrees to ensure the quality and aromas of the wine are preserved.
Pairs well with poultry, mushroom dishes, grilled salmon, vegetable tarts, or soft and creamy cheeses (brie, camembert).
