Meet the ProducerMattia and his sister Lara are the young owners, vignerons and winemakers at Azienda Agricola Scarbolo, the family winery they ‘took over' from their father around 2017.
Their work is the devotion to the Grave, an underatted terrior, and to Pinot Grigio, a grape often less flavoursome.

Destemmed grapes, open top tanks, ‘pied de cuve' directly from the vineyards used as a ‘starter', gentle, manual pushing down of the cap daily. Fermentation starts in stainless steel and the wine is moved into large oak casks to complete part way through. Partial Malo.
A particularly sublime pairing? Prosciutto-preferably from Osvaldo, if you can get your hands on it. The ham's deep, savoury character and subtle salinity complement the wine's fruit and texture to perfection, creating a genuinely memorable match.
